Banana bread has always been one of my favorite snacks! Since becoming vegan, I haven’t been able to have it because most recipes require eggs and milk. LUCKILY, I found this SUPER GOOD recipe online and need to share it with you.
The ingredients are not some random items that nobody has in their kitchen, which is a bonus because a lot of vegan recipes have such random ingredients. I’ve already made this recipe twice and it's consistently delicious every time.
Here ya go!!
Ingredients
¼ cup plain, unsweetened vegan milk
½ tsp apple cider vinegar
½ cup vegan butter
1 cup light brown sugar
3 very ripe medium bananas, mashed
1 tsp vanilla
1½ cup flour
½ cup whole wheat flour
1 tsp baking powder
½ tsp baking soda
¼ tsp nutmeg
¼ tsp salt
¾ cup walnuts, toasted and chopped (optional)
Directions
1. Preheat oven to 350F
2. Grease and flour a 9" loaf pan.
3. In a small bowl, mix together vegan milk and vinegar. Set aside.
4. In a large bowl, mix together vegan butter and sugar.
5. Add bananas, vanilla, and milk mixture to large bowl.
6. In a medium bowl, mix the flours, powder and soda, nutmeg, and salt.
7. Add dry mixture to wet and mix.
8. Add walnuts (optional)
9. Pour into pan. Bake for 45 minutes, or until a toothpick inserted near the center of the loaf comes out mostly clean.
10. Cool.
