5 Easy Vegan Meals to Try

1. Pasta

Pasta is so easy.

  1. Pick your pasta noodle of choice. Just look at the ingredients to make sure there is no eggs or milk.

  2. Pick a sauce. You can hand make one, or buy one! My go-to is “Prego” or “Newman’s Own Fire Roasted Tomato and Garlic”.

  3. Add a protein. I usually add gardein meatless meatballs. These are the best vegan meatballs I have had because they are so flavorful, have the “meatball” texture and taste, and are seasoned perfectly. Some of my friends and family even prefer gardein meatless meatballs over animal-based meatballs!

If you don’t want meatballs, you can try gardein grilled chick’n strips! Be sure to cook thoroughly for the best taste and texture. Don’t rush it.

2. Mac n’ Cheese

There’s a bunch of vegan mac n’ cheese recipes you can find on Pinterest, but I found that the best one is one that I just made up. When you make mac n’ cheese you need noodles, cheese, milk, and butter. It’s the same thing when making it vegan. Make sure the noodles don’t have eggs or milk ingredients, use plain soymilk, vegan butter, and daiya shredded cheddar. Throw in some daiya mozzarella too if you want!

  1. As the noodles are boiling, melt butter in another pot, then add some milk (add little by little) and mix, then add cheese slowly. Don’t add too much cheese at once; vegan cheese takes a bit longer to melt than dairy-cheese.

  2. Based on how you like your mac n’ cheese (how thick/runny/cheesy) add more milk or cheese accordingly.

  3. Drain the noodles when done and drained, add them to the cheese mixture and mix. Add salt and pepper, and enjoy!

3. Stir Fry

Stir Fry is my go-to meal. All you need is: rice, vegetables, soy sauce (or any vegan sauce you want), and chick’n (or any vegan protein, like beefless strips or tofu).

  1. Cook whatever vegetables you want in one pan with olive oil and some water. I usually do onions, carrots, broccoli, water chestnuts, and pineapple. You can also just get a frozen bag of a pre-mixed stir fry blend at the store.

  2. In a separate pan, cook your chick’n. I use Gardein orange chick’n because it tastes so good and is so easy. You can get it in the frozen aisle near the meat-alternatives. Put the frozen chick’n in the pan to de-thaw and cook. If you’re in a rush, put them in the microwave for a little bit first. Once they’re golden brown, turn off the burner and add the sauce (it comes in the gardein bag). Cover the chick’n with it.

  3. When the veggies are ready, pour the orange chick’n in with it

  4. Serve. Rice with the stirfry on top.

4. Tacos, Rice Bowls, Burritos

Ingredients: gardein beefless crumbles, lettuce, tomato, and

  1. Gardein beefless crumbles are also in the frozen aisle near meat-alternatives. Follow instructions on the bag to cook on the stove. Add taco-seasoning.

  2. Assemble your tacos/rice bowl/burrito. Daiya cheddar shreds are either by the other cheeses, or in a non-dairy section at the store.

  3. If you want a vegan sour cream, Follow Your Heart and Simple Truth Organic both have good ones.

5. Mexican Tater Tot Casserole

One of my friends made this for a work potluck and I’ve been

obsessed ever since. I’ve made it for family events and

everyone has loved it.
